468 – The Grill
Built on a concrete base with a fire brick basin, it incorporates passive air flow for optimal burning of applewood and/or natural oak charcoal with a heavy duty stainless steel grill top (see plans/photos).
This grills configuration has two major advantages: firstly, no flame can hit the meat being grilled, thus avoiding the meat turning into harmful nitrosamines. Secondly, the bottom part of the grill retains the fat and juices instead of dripping into the fire, in which case it would create toxic microclouds. The result is the healthiest method of cooking on a grill.
